| Beef Medallions with Madeira Wine Sauce 500g Beef Steaks 1/2 tablespoon salt 1/4 tablespoon ground black pepper 1 cup of red wine 1/2 cup of Madeira Wine 1/1 tablespoon of tomato puree 1 clove of garlic (chopped or crushed) 1/2 tablespoon thyme 1 finely chopped challot Rub the salt and pepper into the steaks. Heat a griddle pan on high. Add the steaks and cook 3 - 4 minutes, or to your own liking, reducing the heat slightly to avoid burning. Remove the pan from the heat and add wine, Madeira wine, and tomato paste to the pan. Stir the sauce well. Add the garlic, shallot and thyme and return the pan to a medium heat. Cook 3 to 4 minutes, stirring frequently, or until the sauce is slightly thickened. Serve the steaks with the sauce spooned over the top. Lovely with a creamy mash! Serves 4. Back. . . |
